In Pop music you often hear the term "cover song," meaning one artist performing a song by another artist and giving it their own spin. This has been going on for centuries, except that in Classical music, it's usually called an arrangement or transcription. For example, harpsichordist Christophe Rousset found the manuscript of a Madame Théobon that includes keyboard arrangements of airs and tunes from Lully operas. Magdalena Hoffmann proves Chopin waltzes and Field nocturnes sound as beautiful on the harp as they do on the piano. Closer to the idea of a cover song, Jacqui Dankworth and the Brodsky Quartet (pictured above) give us songs by Elvis Costello and Sting as well as some original ones.
